  • 4  Organic unsweetened Vanilla SoyMilk
  • Organic Peanut Butter (I save the Glass Jars, I don’t like to use plastics to store my food, I now have a collection. Everytime I buy a jar of PB I throw out a plastic tupperware)
  • 3 Organic Black Bean Soup
  • Organic Quinoa (My new Breakfast Obsession)

So Fresh, so easy, so quick!! No reason no to try! Go to a farmers market with $15. Buy what looks good to you. Take it home and eat it! I mashed these red potatoes with a tablespoon of butter, sprinkle of Garlic, Sazon and adobo while I oven roasted the corn on the cobb for 35 minutes. I made a slice of bacon cut it up and added the green beans. I served it with raw red bell pepper and a small piece of salmon, wild caught. The corn was so sweet you didn’t need to add a thing to it! It was satisfying down to the bones! Try it! The blueberries were outa this world! I eat them in oatmeal everyday! Sometimes twice a day!!

Sautee:
  • Red Onion
  •  Mushrooms
  • 7 cloves of Garlic
  •  handfuls of Spinach
Combine with:
  • Brown Rice Pasta
  • Ripped pieces of raw spinach
  • Organic Tomatoes
  • Raw red onions
  • Cucumbers
  • Red Peppers
Season with:
  • Italian Seasoning
  • Fennel
  • Sea Salt
  • Black pepper
  • Red Pepper Flakes
Lastly:
  • Add a splash of Strawberry Balsamic Vinegar
  • Shavings of fresh Parmesaen
Serve hot.

*Top with Fish if desired.
** I served it in a ramekin from the dollar store which I topped with extra Parmesan shavings and broiled to warm through and melt the cheese (6 min.).
***Italian Seasoning: Marjoram, Thyme, Basil, Rosemary, Rubbed Sage and Oregano.
  • I boiled a head of cauliflower
  • I threw in a red potato (cuz it was there, you don’t need to)
  • Drain
  • A dash of sea salt, pepper, fresh rosemary,teaspoon of nonfat plain yogurt & a wedge of Laughing Cow Light Creamy Swiss

Broiled Salmon, Cauliflower Mash & Mixed Veg

Fresh & Tangy [Bean Salad] revisited

Here’s the Bean salad again. I missed eating it, so I went right out and bought the ingredients for just a few dollars.

It generates about 5 meals. Cheap, Easy, Fresh, Filling, Tasty & Tangy. Here goes…

I chopped ::

A Cucumber

A Tomato

Celery

An Apple (squeeze lemon over the apples)

A Red Pepper

Green Onion

White Onion

Garlic

and Mixed them together with::


 

 

 

 

 

 

 

 

 

 

 

A can of White Beans

salt

Pepper

Italian Seasoning

EVOO

Strawberry red wine vinegar

Plain Greek Yogurt

* Use whatever Bean you want. I used less celery than the recipe called for b/c I’m not a fan but actually when you chop it tiny it isn’t noticeable. I’ll add more next time. The Apple makes it all worth eating by the way. Try it.

Dinner [Real Apple Spice Oatmeal]

Wow, this was a satisfying dinner, here goes….


  • Make your oatmeal [this time I threw oatmeal and water in a bowl and microwaved it]
  • Popped it out, stirred in a dash of Almond milk
  • Dash of stevia/truvia,pumpkin spice, nutmeg
  •  Stir in apple chunks

Remember, often whats attractive to us about a certain dish are the flavors and aromas coing from the spices and vegetables, rather than the meats, etc. themselves. Try a vegetarian diet for a week, get to know your herbs and play with different seasonings, sauteing onion, garlic, peppers or mushrooms to achieve a more satisfying meal. Take a break from meat, feel lighter, save yourself some calories after this Season of Overeating has suckered you in yet again!
