So Fresh, so easy, so quick!! No reason no to try! Go to a farmers market with $15. Buy what looks good to you. Take it home and eat it! I mashed these red potatoes with a tablespoon of butter, sprinkle of Garlic, Sazon and adobo while I oven roasted the corn on the cobb for 35 minutes. I made a slice of bacon cut it up and added the green beans. I served it with raw red bell pepper and a small piece of salmon, wild caught. The corn was so sweet you didn’t need to add a thing to it! It was satisfying down to the bones! Try it! The blueberries were outa this world! I eat them in oatmeal everyday! Sometimes twice a day!!

Fresh & Tangy [Bean Salad] revisited

Here’s the Bean salad again. I missed eating it, so I went right out and bought the ingredients for just a few dollars.

It generates about 5 meals. Cheap, Easy, Fresh, Filling, Tasty & Tangy. Here goes…

I chopped ::

A Cucumber

A Tomato


An Apple (squeeze lemon over the apples)

A Red Pepper

Green Onion

White Onion


and Mixed them together with::












A can of White Beans



Italian Seasoning


Strawberry red wine vinegar

Plain Greek Yogurt

* Use whatever Bean you want. I used less celery than the recipe called for b/c I’m not a fan but actually when you chop it tiny it isn’t noticeable. I’ll add more next time. The Apple makes it all worth eating by the way. Try it.

No Pasta, Pasta [Spaghetti Squash]

  • Place the Spaghetti Squash in the oven, 360  55 min. [Poke holes in it]
  • Make a maranara [Or buy one]
  • Or Sautee onions, mushrooms, garlic, green peppers, ground turkey. Set Aside.

  • Remove the Spaghetti Squash, Scoop the Spaghetti out of the skin
  • Place spinach in a casserole dish, then Spaghetti, then Maranara or Turkey mixture
  • Bake 20 min. more

So Good it’s Wrong [Angus]

Where do i start? The Garlic Mashed Potatoes? the Bacon Green Beans? The Angus Roast?

Okay here goes…

Four Large Potatoes

Mash them, throw in a little butter a splash of milk and enough plain yogurt to to get the consistency your looking for. Season- salt ,pepper, garlic powder. Done.

Angus Chuck Roast

Roast that baby with 3 cloves of garlic, carrots, onion and musrooms. The longer the better.

Try a 3.5 LB piece of Angus seasoned with Salt and pepper.

Slow Cooker/Crock Pot – Insert Veggies, then Meat, Splash on some whostershire sauce. (Mix 2 tbs of water & 1 tbs cornstarch, throw that in too) Done.

Cook aprox. 6 hours on high. Taste the gravy, adjust seasoning at hour 5. Eat.

This one gets better each time you warm it up. I cooked mine overnight, day 3 was the best.
